Ingredients
60 grams of sprouted amaranth flour
5 red peppers
3 garlic cloves
1/2 white onion
10 almonds
1400g chicken broth or vegetable broth
30 ml butter/ olive oil/ ghee
20 grams butter
Vegetable seasoning and spices
Salt
Pepper
How to Make It
Start by slicing the red peppers and removing their seeds. Cut the onion into slices and peel and halve the garlic cloves.
In a pot, heat olive oil or coconut oil and fry the onion and garlic until they are fragrant and lightly browned.
Add the sliced peppers and almonds, and continue to cook for a few more minutes. Pour in the chicken or vegetable broth and allow the mixture to simmer for about 20 minutes until the peppers are tender.
Let the mixture cool slightly before blending it together with the amaranth flour until fully combined.
Stir in the butter until melted.
Season with salt, pepper, and your choice of vegetable seasoning and spices.
Serve the soup warm, garnished with a drizzle of olive oil/butter/ghee.
