Ingredients
1 cup chickpea flour
½-1 tsp salt (adjust to taste)
1 tsp baking powder
1 tsp coriander powder/curry powder/other seasonings (optional)
1/2 tsp chat masala/amchur or 1tbsp Lemon/lime juice
1 cup water or a little more if needed
1-2 tsp ghee/oil
How to Make It
Place all the ingredients (chickpea flour, salt, baking powder, seasonings, and water) in a bowl. Stir until smooth. Let the batter sit for 15 minutes to thicken. If the batter becomes too thick, add a little more water and mix well.
Heat a small amount of oil/ghee in a well-seasoned cast iron pan over medium-high heat. Once the pan is hot, pour some batter into the pan and spread it out evenly to form a pancake. Cook until the bottom is golden brown and firm, and you can easily move it with a spatula (about 2-3 minutes).
Carefully flip the pancake and cook the other side for 1-2 minutes, or until cooked through and golden brown. If the pancake sticks to the pan, cook it a bit longer until it releases easily.
Place the cooked pancakes on a plate. Top each pancake with your favorite filling. Carefully fold one side over the filling while the pancakes are still warm (they become firmer and can break easily when cooled).
Garnish the pancakes with chopped herbs if desired. Serve with creamy dips such as hummus, guacamole, aioli, or your favorite sauce.
