Ingredients
2 tablespoons sprouted finger millet (ragi) flour
2 tablespoons jaggery/sugar/maple syrup
1/2 tablespoon raw cacao powder/cocoa powder
2 teaspoons chocolate chips
1/2 cup milk
1/2 cup water
How to Make It
In a cup, combine water and milk. Set aside.
In a pan, finger millet flour, cacao powder, and jaggery/sugar/maple syrup or sweetener of your choice. Whisk until well combined.
Slowly pour in the milk-water mixture while continuing to whisk.
Switch ON the stove and keep stirring using a whisk. Cook over the lowest flame possible.
The mixture will start to thicken and come together. This process should take at least 8-10 minutes for the ragi to fully cook over low heat. If needed, add more water.
Add chocolate chips and continue stirring until the mixture is thick and shiny.
Once the pudding coats the spoon and reaches the desired consistency, switch off the heat immediately.
Pour the pudding into ramekins. Cover and refrigerate for atleast 2 hours.
When serving, garnish with grated chocolate and/or drinking chocolate powder and enjoy :)
