Ingredients
¾ cup mixed millet flour
¾ cup oat flour or powdered oats
18-20 seedless dates, roughly chopped
1½ cups milk
1 tsp vanilla essence
¼ cup honey
⅓ cup melted butter/ghee/oil
1 tsp baking powder
1 tsp baking soda
A pinch of salt
Chopped almonds for garnishing
How to Make It
In a bowl, soak the dates in milk and set aside for 2-3 hours.
Preheat the oven to 180ºC.
Blend the soaked dates along with milk until smooth. Transfer this mixture into a large bowl, add vanilla essence, honey, and oil, then beat with an electric beater until well combined.
Sift the mixed millet flour, powdered oats, baking powder, and baking soda directly into the bowl. Add salt and gently fold the mixture until well combined.
Pour the batter into a greased and dusted 6-inch cake tin. Sprinkle chopped almonds. Place it in the preheated oven and bake for 30-40 minutes.
Once baked, remove the cake from the oven and allow it to cool to room temperature. Remove from the cake tin and cut into wedges. Serve with coffee.
